Chicken roast

                                                 CHICKEN ROAST

INGREDIENTS

  • Chicken with bones – 600 or 700 gms
  • lemon juice – 2 tsp
  • Onion thinly sliced – 2 or 3
  • Tomato chopped – 1
  • Ginger garlic paste – 1 tbsp
  • Red chilli pwdr – 1 tsp or as per taste
  • Turmeric pwdr – ½ tsp
  • Coriander pwdr – 3 tsp
  • Pepper pwdr – 1/2 tsp
  • jeera pwdr – 1/4 tsp
  • Garam masala pwdr – 1/2 tsp
  • Fennel seeds pwdr – ½ tsp [ optional ]
  • Oil – 2 tbsp
  • Curry leaves – 2 sprig
  • Salt to taste

PREPARATION

Clean , wash rinse and cut the chicken .Marinate it with lemon juice + ¼ tsp turmeric + salt and keep aside for some time [minimum 30 mins or overnight in fridge ]

METHOD

Heat oil in a heavy bottom pan .

Add onion + few curry leaves + green chiili and fry till light brown.

Add ginger garlic paste and fry till raw smell leaves .

Lower the flame.

Add chilli pwdr + turmeric + garam masala pwdr + coriander pwdr and fry .

Now if you want ,you can add 1 sliced tomato . Add tomato + salt and fry till soft .

Add the marinated chicken + salt and stir fry for 2 mins till it is well coated with masalas .

Cover the chicken and let it cook .

The chicken will sweat [ leave water ]

Once it completely sweats , open the lid and cook.

** We don’t have to add water – the chicken has to cook in its own juice.

Keep stirring in between .

Cook till the chicken is done and complete water is evaporated .[ it should be dry + oily and the chicken should be roasted well ]

Off the flame and garnish with curry leaves .

NOTES

  1. *** if the chicken is not cooked and there is no water ,then you can sprinkle little water to cook the chicken.
  2. Cooking time depends on the size of the chicken pieces .
  3. I took half of regular red chilli pwdr + Kashmiri red chilli pwdr for more colour .
  4. if you make the same recipe with ghee ,your ghee chicken roast will be ready .
