CHILLI CAULIFLOWER GRAVY RECIPE
CHINESE CHILLI /MANCHURIAN CAULIFLOWER GRAVY RECIPE
INGREDIENTS FOR CRISPY CAULIFLOWER
- Cauliflower florets – 3 to 4 cup
- Maida – 1/2 cup
- Corn flour – ¼ cup
- ginger garlic paste -1 tsp
- soya sauce – 1 tsp
- red chilli pwdr – ¾ tsp
- pepper pwdr – pinch
- salt as per taste
- saffron red colour – 2 drops [optional]
- water – 100 ml or as required
- oil for deep fry
PREPARATION
- Soak the florets in salt water for sometime and drain to get rid of worms.
- Either soak the florets in hot water with salt and little turmeric for 15- 20 mins OR boil for 2 – 3 mins and immediately drain the water , keep under running water and keep aside.
- Make a medium batter [nor too thick or too thin ] of maida + cornflour + salt + ginger garlic paste + chilli pwdr + food colour + pepper pwdr + soya sauce.
METHOD
Heat oil in a deep pan.
Dip each blanched cauliflower in the batter and fry it.
Fry till crispy and golden brown in colour and the bubbling stops.
Remove on absorbent paper.
INGREDIENTS FOR THE GRAVY
- Olive oil – 1 tbsp
- Garlic + ginger + green chilli finely chopped – 1 tbsp
- Onion – ½ cup diced and shelled
- Capsicum – ½ cup diced
- Soya sauce – 1tsp
- Chilli sauce – 2 tsp
- Tomato ketchup – 1 tbsp
- Salt as per taste
- Sugar – ½ tsp [optional]
- Water or stock – 1 ½ cup
- Cornflour – 1 tbsp mixed in 2 tbsp water
METHOD
Heat oil in a pan.
Add ginger + garlic + chilli.
Saute for few seconds. [don’t brown]
Add onion + capsicum and fry for 1 minute by stirring or tossing.
Add the water or stock.
Then add the chilli sauce + soya sauce + tomato sauce.
Adjust salt + sugar + pepper pwdr and mix well .
Add the cornflour mixture .
Stir and cook till the sauce changes colour and becomes glossy.
Add the fried cauliflower and mix well till all the pieces are coated well with the gravy.
Off the flame.
Garnish with finely chopped spring onion.
NOTES
- Make stock by boiling water + maggi cubes.it adds more flavour.
- You can add more water if you want more gravy.
- Adjust sauces as per you taste.
- You can also add ajinomotto .
- You can also use coriander leaves for garnishing.
- you can aslo add 1tsp of vinegar.
