TURKISH CHICKEN KEBAB / CHICKEN SHISH

The world-famous Turkish kebab means ‘rotating’ kebab in Turkish. It is made from lamb, chicken, or beef, slowly roasted on a vertical spit, and then thinly sliced off.

chicken shish is cubes of marinated chicken that are then skewered and grilled and usually served with a variety of accompaniments .

A food rich in protein, chicken can help with weight management and reduce the risk of heart disease. Chicken contains the amino acid tryptophan, which has been linked to higher levels of serotonin (the “feel good” hormone) in our brains.

INGREDIENT

  • Boneless chicken cubes – 500 grms [ preferably thigh portion flesh ]
  • ¼  cup fresh thick curd ( not sour )
  • 1 or 2 tsp freshly squeezed lemon juice, or more to taste
  • 1 tablespoon olive oil
  • 1 tablespoon ketchup
  • 2 or 3 tsp honey
  • 1 tablespoon finely minced garlic
  • ¾  tsp chilli pwdr
  • 1 tsp roasted jeera pwdr
  • ½  tsp pepper powder
  • Generous pinch of cinnamon pwdr
  • Salt to taste
  • Wooden or metal skewers

METHOD

In a  bowl, combine the garlic ,lemon juice, curd,  olive oil, tomato ketchup , black pepper pwdr , red chilli pwdr , cinnamon pwdr , jeera pwdr  ,honey and salt.

Mix well. TASTE and adjust ingredients. 😊

Add the chicken cubes and mix well.

 Cover an keep aside in fridge for minimum 3 to 4  hrs or overnight .

If using bamboo skewers, soak them in water for a few hours so they don’t ignite on the grill. 

Remove the chicken pieces from the marinade and thread them onto the skewers.

The chunks of chicken should touch each other, but don’t put them too close together to ensure they cook through.

Heat a grill pan or regular pan .

Drizzle little oil all over .

Place the kebabs .

 Turn and cook from all sides till the chicken is cooked .

It takes roughly around 15 mins to be done .

Once done transfer the kebabs to a platter and serve with any side accompaniments .
