MATKI ALOO SABJI RECIPE / MOTH COOKED WITH POTATO RECIPE

INGREDIENTS

  • Sprouted Moth beans – 1 cup [matki in Marathi ]
  • Potato cubes – 1 big
  • Oil – 1 tbsp
  • Cumin seeds – 1 tsp
  • Onion finely chopped – 1
  • Ginger garlic paste – 1 tsp
  • Tomato finely chopped – 1
  • Red chilli pwdr – 1 tsp or as per taste
  • Asafoetida – a pinch
  • Curry leaves – few
  • Coriander pwdr – 1 tsp
  • Turmeric – ¼ tsp
  • Goda masala – 2 tsp OR ½ tsp garam masala
  • Salt to taste
  • Finely chopped coriander leaves to garnish

PREPARATION

  1. Clean ,wash and soak ½ cup [ ½ cup will give 2 cup of sprouts ] of dried moth beans [matki ] for overnight.
  2. Drain the water and wrap the matki in damp cloth ,tie it and keep it in a warm and dark place for a day to sprout it .
  3. Wash it again and use it.

METHOD

Heat oil in a pressure cooker ,add cumin seeds and let it splutter.

Add onion + curry leaves and fry till light brown.

Add ginger garlic paste and stir fry till raw smell leaves.

Add tomatoes and cook till soft and oil separates .

Add chilli pwdr + turmeric + coriander pwdr + goda masala or garam masala and fry.

Add the sprouted matki + potato ,mix well and stir fry for 1 min.

Add enough water and pressure cook for 1 whistle ,till the beans are soft ,[not mushy ] and the potato is cooked.

Once pressure releases, open the cooker and mix .

Simmer for 1 min on low flame if watery .

Garnish with coriander leaves

Serve as a side dish.

NOTES

  1. If using garam masala add 2 tsp of coriander leaves
  2. After putting off the flame ,you can squeeze in some lemon juice.
  3. Add water as per the consistency you want.
