BEETROOT MASALA PORIYAL

INGREDIENTS

  • Beetroot – 250 or 300 grams
  • Oil – 1 tbsp
  • Onion – 1
  • Green chilli – 1
  • Curry leaves
  • Fennel seeds – 1/2 tsp
  • Jeera – 1/2 tsp
  • Pepper – 1/4 tsp
  • Red chilli 3
  • Garlic – 3
  • Grated coconut – 4 tbsp
  • Salt
  • Water – ½ cup water as needed to cook the beetroot

METHOD

Dry roast fennel seeds+ jeera+ pepper+ red chilli + garlic for a min.Add the coconut and stir fry till light golden. Cool it and grind into coarse powder and keep aside.

Heat oil in a pan.

Add onion + green chilli + curry leaves and stir fry till translucent.

Add the chopped beetroot and mix well.

Add water + salt and mix well.

Cover and cook till the beetroot softens and th water evaporates completely.

Add the coconut powder and mix well.

Stir and cook for a min and off the flame.

Garnish with coriander leaves and serve as a side dish .
