 SOUTHEKAYI AVALAKKI RECIPE / HOW TO MAKE CUCUMBER POHA 

A must try  quick and healthy breakfast. Cucumber adds a beautiful flavour to the poha and it’s super refreshing and comforting to eat.

INGREDIENTS
1 cup poha
1 cup grated cucumber
3 tbsp grated coconut
Small finely chopped onion
1/2 tsp Sugar
2 tbsp finely chopped coriander leaves
1 tbsp oil
1 tsp mustard seeds + jeera
2 tbsp peanuts
1 tsp ginger grated
2 green chillies
1 sprig curry leaves
Salt as per taste

METHOD

Wash and soak the poha in a strainer.

Keep aside for 10 mins.

Now transfer to a bowl , add grated coconut + cucumber + onion + coriander leaves + salt and sugar .

Heat oil in a pan , crackle mustard seeds .

Add the peanuts and fry till golden.

Add grated ginger + green chilli + curry leaves and stir fry for few seconds.

Add the poha and mix well .

Stir  and cook for 2 mins and off the flame .

Serve hot .
