HEALTHY DRUMSTICK LEAVES ADAI

Adai is a healthy, protein-rich and nutrient dense lentil crepe from Tamil Nadu cuisine.

Adai is a healthy, protein rich breakfast dish made using mixed dals and rice. It’s is slightly thicker and heavier than dosa.

Adai with Aviyal is a great combo served in most of the restaurants and even in homes.

In Drumstick Leaves Adai , we  add drumstick leaves to the Adai batter. Addition of drumstick leaves enhances the flavour and taste of the Adai.  Not just that, but it’s even more healthier (high iron content) than the conventional adai. Drumstick Leaves Adai is very simple and easy to prepare.

Here in this recipe , instead of adding the leaves , I have grinded it together with the dal and rice .

Adai is a variety of the more popular southindian dosa… 
– While Dosai are thinner (crepe like), Adai tend to be thicker and heavier.
– While Dosa batter is made using rice and black lentils (urad), Adai batter is made using mixed lentils along with rice.

The classic combo for Adai is avial   which is a vegetable and coconut stew. Another loved combo is with jaggery mixed with ghee.

The leaves have 7 times more vitamin C than oranges and 15 times more potassium than bananas. It also has calcium, protein, iron, and amino acids, which help your body heal and build muscle. It’s also packed with antioxidants, substances that can protect cells from damage and may boost your immune system.

INGREDIENTS

  • ½  cup Raw rice
  • ½  cup Idli rice/ parboiled rice
  • ¼  cup Chana dal
  • 2 tbsp Toor dal
  • 2 or 3 tbsp Urad dal
  • 2 tbsp Moong dal
  • 1 tsp fenugreek seeds [ optional ]
  • 1 or 1 ½ cup finely chopped  onions/shallots
  • 1 ½ OR 2  cup tightly packed drumstick leaves
  • ¼ tsp Asafoetida
  • 3 or 4 or as per taste Red chillies
  • 1 green chilli
  • Small piece ginger
  • 1 tsp fennel seeds
  • Salt to taste

METHOD

Soak rice + dal  for 4 hrs minimum.

 First grind the red chillies + green chilli +  fennel seeds , ginger , asafoetida + moringa leaves to a coarse mixture .

Now add soaked rice and dal and grind .

Add salt and beat the batter well for 1 or 2 mins .

Add the onions and mix well.

The batter should be thicker than  dosa batter. So adjust water as needed.

Heat the tawa  and spread one laddle full of batter as thick adais.

After few seconds add oil around. Let it get cooked for sometime. (you can cook covered  with a lid, before flipping )

Flip the adai and cook the other side too .

Remove and serve with any side accompaniments .

 Southindians serve with avial .

NOTES –

  1. You can make thick adais or thin crispy dosa kinds.If you want to make thin adai dosas then make the batter little thin so that spreading is easy.
  2. Use cast iron dosa pan so the edges were nicely crisp.
  3. You can ¼ cup of grated coconut to the batter.
  4. Also we can add coriander leaves to the batter .
