HEALTHY DRUMSTICK LEAVES DAL / MORINGA DAL

Pulses or lentils are rich in protein, fibre and iron. That’s why, eating dal every day can help you stay healthy and fit. Love it or hate it, but you can’t go without a katori of dal, especially when you’ve grown up in India.

The leaves have 7 times more vitamin C than oranges and 15 times more potassium than bananas. It also has calcium, protein, iron, and amino acids, which help your body heal and build muscle. It’s also packed with antioxidants, substances that can protect cells from damage and may boost your immune system.

INGREDIENTS

·  Drumstick leaves – 2 cups tightly  pressed

·  Tuvar – 1/2 cup

·  Turmeric powder – ½

·  Salt to taste

·  Grated fresh coconut – ½  cup

·  Cumin seeds- 1 tsp

·  Green  chillies – 3  or  4 or as per taste

·  Oil – 1 tbsp

·  Mustard seeds – 1 tsp + 2 red chilli broken

·  Asafoetida- a generous pinch

·  Onion- 1 finely chopped

·  Garlic crushed – 3 cloves

·  Tomato- 1 big finely chopped

PREPARATION

  1. Grind together coconut + cumin seeds to a smooth paste by adding ½ cup water .
  2. Pressure cook toor dal along with some salt + green chilli + turmeric powder. Cook until mushy.
  3. Blend it .
  4. Add 2 or 2 21/2 cup hot water + coconut paste and mix well .
  5. Keep aside .

METHOD

Heat oil in a pan and add mustard seeds.

When they crackle, add asafoetida + onions +  garlic and cook until onions are translucent.

Add tomatoes + salt and cook until tomatoes are fully cooked and mushy.

 Add drumstick leaves a.d mix well.

Stir and cook till it shrinks completely . [ 2 – 3 mins ]

Now, add the cooked dal and mix well.

Adjust salt as needed .

Bring  to a boil and off the heat.

Serve hot with rice.
