Puran poli RECIPE
AUTHENTIC PURAN POLI /MAHARASHTRIAN PURAN POLI

OTHER NAMES – Bobbattu, obbattu, holige, ubbatti, vedmi, poli, puranachi poli, god poli, pappu bakshalu, bakshalu, oliga, abatulu.
Puran poli is a sweet flatbread stuffed with a sweet lentil filling made from husked spilt bengal gram (chana dal) and jaggery. Puran poli is a popular Maharashtrian recipe made during Ganesh Chaturthi or Diwali or any other festive occasion.
INGREDIENTS
- Chana dal – 1 cup
- Grated Jaggery – 3/4 or 1 cup
- Cardamom pwdr – 1/2 tsp
- Nutmeg / jaiphal pwdr or dry ginger powder – a generous pinch
- Maida – 2 cup
- Turmeric – 1/4 tsp [ optional ]
- Oil / ghee to knead the dough – 4 or 5 tbsp
- Salt to taste
- Rice flour or maida flour for dusting
PREPARATION OF PURAN /STUFFING .
Clean ,wash ,rinse and soak the chana dal overnight or min 3 to 4 hrs.
Next day pressure cook it with 1 cup water + 1 tsp oil . [ you can add more water if you want to make amti also ]
Pressure cook upto 3 or 4 whistles till soft .[the dal has to be whole and soft ,not very mushy ]
Once done drain off the excess water by using a strainer .[ excess water can be used for making katachi amti – gravy ]
Transfer the dal to a nonstick pan .
Add the grated jaggery , mash and mix well .
Cook on medium flame .
The mixture will become loose as the jaggery melts .
Add elaichi pwdr + nutmeg pwdr and mix well .
Stir and cook till it thickens and the mixture leaves the side of the pan . [be careful it will stick at the bottom ]
TEST – keep a spoon standing in the centre of the mixture ,if it stands firmly means the puran is done . [chk the video ]
Add elaichi pwdr + nutmeg pwdr and mix well .
Allow the mixture to cool .
Strain the puran through a strainer or use a puran yantra or blend in a mixer jar into fine paste.
Puran is ready .Allow it to cool before use .
PREPARATION OF DOUGH
Take the flour + salt + oil in a big plate and mix well .
Add water and knead it into a soft loose and soft dough .
Cover and keep aside for 1 to 3 hour .
After and hour ,grease your hands and again knead for sometime .
Divide the dough into equal parts and roll each part into a smooth ball .
METHOD TO MAKE PURAN POLI
Take a dough ball and roll it into a small poori size.
Take a portion of the stuffing , roll it into a ball and keep in the centre .The stuffing ball should be more than the dough ball .
Bring the edges together and seal it ,remove excess dough .
Roll it gently like parathas by dusting dry flour .
Place it on a hot tava / pan .
Roast on both sides till golden spots appear all over and it puffs up .
Apply ghee and remove from pan .
Puran poli is ready to serve – either plain as dessert or with amti .
NOTES
- If you don’t soak then pressure cook for more whistles till it is done .
- Instead of jaggery some use sugar OR half of each .
- The quantity of stuffing has to be more than the dough .
- Don’t flip it many times while roasting ,it will break .you have to just flip it twice.
- Some add dry ginger pwdr or fennel pwdr to the puran .
- You can make with only wheat flour or use maida + wheat flour in any proportion .
- Some use rice flour while rolling the polis .
- The dough has to be oily and soft .
- You can also make with chapati dough .
- You can store for few days .
