Beans steamed with dal/PARUPPU USILI RECIPE
BEANS STEAMED WITH DAL / PARUPPU USILI

INGREDIENTS
- French Beans – 150 or 200 gms
- Tuvar / toor dal – ½ cup
- Chana dal – 1 tbsp
- Whole red chilli – 4 or as per taste
- Asafoetida – a pinch
- Jeera -1 tsp
- Freshly grated coconut – ¼ cup
- Oil – 1 tbsp
- Mustard seeds -1tsp
- Urad dal – ½ tsp
- Curry leaves – few
- Onion finely chopped – 1 [optional ]
- Sambar pwdr – 1 tsp [optional ]
- Finely chopped coriander leaves for garnish
- Salt to taste
PREPARATION
- Clean ,wash ,rinse and pat dry the beans . String it and chop it finely as shown in image .
- Clean, wash ,rinse and soak the dal with the red chilli for minimum 1 hr or more .It should be soaked well to get a nice texture .Drain the excess water from the soaked dal .[ there should be no water ]
- First grind the soaked red chilli + asafoetida + salt .Add the soaked dal and blend it into a coarse mixture .
- Grease the idli plates .
METHOD
Remove the mixture in a mixing bowl ,add the beans and mix well with clean hands .[remember there should be no water else it will be mushy and sticky ]
Adjust salt if required .
Fill the dal mixture in the moulds with hands by sprinkling – don’t press ,it has to be loose.
Steam it for 10 – 12 mins .
Remove and allow it to cool completely .
Again with clean hands crumble the steamed dal + beans .
In a pan heat oil ,add mustard seeds + urad dal and fry .
Add onion + curry leaves and fry till translucent .
Add the crumbled dal + beans mixture and mix well .
Stir fry for 1 minute.
Sprinkle the coconut + sambar pwdr and coriander leaves .
Off the flame and serve as a side dish .
Goes well with rice + any plain kadhi .
VARIATION
- I have mixed the dal and beans together and steamed it – you can steam the dal and beans separately and later mix it.
- Some veges which u don’t want to steam – u can stir fry and later add the crumbled steamed dal .eg Capsicum – u start with tempering , add chopped capsicum -stir fry till it is done and continue with the remaining procedure .
NOTES
- *** Dal should have no water while grinding .
- Instead of red chilli ,u can add green chilli .
- Sambar pwdr is optional but it adds flavor .
- As it is a plain preparation make it little spicy – adjust chilli accordingly .
- You can also add chopped cabbage and green peas together with the beans .
- The same recipe can be tried with banana flower / cluster beans / cabbage / snake gourd / mixed veges /cauliflower / broccoli even capsicum .
- U can play with the proportion of both the dals – u can take half of each .OR just make of toor dal .U can add more veges and less dal or less veges and more dal.
- U can just make it plain without any veges just the dal .
