HOW TO COOK RED MAPILLAI SAMBA / RED KAVUNI RICE IN COOKER

Mapillai Samba is a traditional, red-hued, unpolished rice variety from Tamil Nadu, known as “bridegroom rice” due to its historical use for increasing strength and stamina. This high-fiber, iron-rich grain aids digestion, boosts immunity, and suits diabetes management due to its low glycemic index

INGREDIENTS

  • Mapillai samba rice – 1 cup
  • Water – 3 ½  cup
  • salt to taste

METHOD

Wash mapillai samba rice 2-3 times then soak it in water for 8 hours or overnight.

 Do not skip soaking; it is crucial to soften the red bran layer. 

Add soaked rice and 3  ½ cups of water + salt to the cooker.

Cook on medium heat for 4–5 whistles.

Let the pressure subside naturally for 10 minutes before opening.

Drain if excess water .

Serve with any spicy gravy or Kuzhambu.
