BEST SAMBAR RECIPE / SAMBAR FOR RICE

INGREDIENTS

  • Toor dal – ½ cup
  • Turmeric – ½ tsp
  • Tomato – 1
  • Oil – 1 tbsp
  • Mustard seeds – 1 tsp
  • Curry leaves
  • Red chilli – 2
  • Asafoetida – generous pinch
  • Shallots / onion – – 10 nos shallots OR medium size onion
  • Mix veges – 2 or 3 cups [ brinjal / ladies finger /whiteand yellow pumkin/beans /Carrot / potato ]
  • Sambar powder – 3 tbsp or as per taste
  • Jaggery – 1 ½ tsp or as per taste
  • Tamarind – small marble size soaked in ½  cup hot water
  • Finely chopped coriander leaves for garnish

METHOD

Pressure cook dal + turmeric + tomato upto 4 whistles.

Once done mash the dal well .Add 2  cup water and mix well .Keep aside till use

Heat oil in a pan , crackle mustard seeds.

Add curry leaves + red chilli + asafoetida and give a mix .

Now add the shallots + mix  veges and stir fry for 3 to 4 mins.

Add 1 cup water + little salt and bring to a boil .

Cover and cook for 8 to 10 mins till the veges are almost cooked.

Add in sambar pwdr + tamarind juice + jaggery and give a nice mix.

Simmer for 2 to 3 mins .

Now add in the cooked dal and mix well

Adjust water as per the consistency you want .

Adjust salt to taste .

Bring to a boil .

Simmer for 1 min and off the flame.

Garnish with coriander leaves.

Sambar is ready to be served with rice or any southindian breakfast .
