DIWANI HANDI / PALAK MAKHANI GRAVY

INGREDIENTS

  • Boiled Mixed veg – 2 cup [carrot /potato /cauliflower /green peas /beans ] OR  Use 300 gms paneer
  • Spinach /palak – 1 bunch
  • Coriander leaves – ½ cup
  • Butter + oil – 1 tbsp
  • Onion roughly chopped – 1
  • Ginger garlic paste – 1 tbsp
  • Green chilli – 5 or as per taste
  • Cashew – 10
  • Fresh curd – 3 tbsp
  • Kasoori methi pwdr – 1 tsp
  • Coriander pwdr – 1 tsp
  • Garam masala pwdr – ½ tsp
  • Turmeric pwdr – a generous pinch
  • Sugar – ½ or 1 tsp
  • Salt to taste
  • Butter – 2 tbsp
  • Few whole garam masala [ elaichi /cinnamon/jeera/clove ]
  • Fresh cream – 1 or 2 tbsp

PREPARATION

Clean ,wash and rinse and soak the palak leaves for sometimes .Again rinse and drain the excess water .Transfer it to a colander for excess water to drain off .Chop it roughly .

Heat 1 tbsp oil + butter ,add onion and fry till transparent .

Add ginger garlic paste and fry till raw smell leaves .

**** if using tomato instead of curd – add the chopped tomato  now and fry till it softens.

Add green chilli and cashew and fry .

Add coriander and mix well .

Add palak and fry till it reduces completely .

Allow the mixture to cool.

Transfer this mixture to a mixie jar ,add curd + sugar + salt and blend it into a smooth mixture .Keep aside .

METHOD

Heat 2 tbsp butter in a pan ,add whole garam masala and fry .[ don’t burn it ]

Add the boiled veges and mix well .

Add coriander pwdr + garam masala pwdr + turmeric pwdr and fry for sometime .

Add the palak puree and mix well.

Add kasoori methi pwdr .

Adjust water if required.[ the gravy has to be thick ]

Mix in the fresh cream .

Simmer on low flame for a minute and off the flame .

Serve hot as side dish for rice or any Indian breads.

NOTES

  1. Instead of curd ,u can add 1 tomato .
  2. Instead of veges ,you can add 300 gms of paneer cubes.
  3. It is a must try gravy .
  4. I added few fried makhanas .[ lotus seed ]
  5. Even non vegetarians can try this gravy by adding small pieces of  fried / boiled  chicken.
  6. Don’t overcook the veges.
  7. U can try the same method for palak paneer .
