SURAN / YAM ROAST
SURAN YAM ROAST
Suran or Elephant foot yam helps detoxify your body by keeping your internal organs clean. It flushes out toxins and keeps your liver, intestines, and stomach free from pathogens.
Suran is rich source of Omega-3 fatty acids. Thus, it improves the good cholesterol and reduces the bad cholesterol, which in turn helps in reducing the weight. Therefore, people who want to lose the weight or wish for joining weight management program, should include suran in their diet.
INGREDIENTS
- Yam / suran – 250 grms
- Tamarind – a small piece
- Red chilli pwdr – 1 tsp or as per taste
- Turmeric pwdr – ¼ tsp
- Coriander pwdr – 1 tsp
- Sambar pwdr – 1 or 1 ½ tsp [ sambar pwdr also has chilli ]
- Asafoetida a pinch
- Garlic crushed or grated – 2 tsp
- Rice flour – 1 ½ tsp
- Salt to taste
- Oil to fry – 2 tbsp
- Curry leaves – a sprig
PREPARATION
- Peel the skin and chop the yam into small cubes . Apply oil on your palms while cutting .
- Wash the yam well .
- Boil the suran in enough water + salt + tamarind till soft . don’t overcook .It should be in shape .
- NOTE – if you add tamarind while cooking the yam, it removes the itching it creates on the throat.
METHOD
Drain the excess water from the cooked yam.
Spread it on a plate .
Take all the masala pwdrs + rice flour + garlic + salt in a plate and mix well and add it over the cooked yam . Mix well till it is coated nicely.
Keep aside for marination for 10 mins or more .
Heat oil in a flat frying pan .
Add curry leaves and give a mix.
Immediately add the marinated yam and give a nice mix .
Sprinkle 1 tbsp of water, close the lid and cook for 5 – 7 minutes.
Turn in between to make sure it gets cooked evenly.
The yam will get roasted well .
Off the flame .
Serve hot as a side dish .
Sprinkle little chaat masala / lemon juice while serving .[ optional ]
