STUFFED FRESH RED CHILLI PICKLE / LAL MIRCH KA ACHAR /लाल मिरची लोणचे/RED CHILLI PICKLE/ओल्या लाल मिरचीचं लोणचं

INGREDIENTS
- 250 grams fresh red chilies
- 250 ml oil [ mustard oil ]
- 1 Tbsp Methi dana / fenugreek seeds
- 2 tbsp Saunf / fennel seeds
- 2 tbsp jeera
- 1 tbsp Black pepper
- 1 tbsp Ajwain
- ¼ cup split mustard Seeds [ used in pickles ]
- 1 tsp asafoetida
- 1 tbsp red chili powder
- 1 tbsp turmeric powder
- 1 tbsp kalonji / Nigella Seeds
- 1 ½ tsp amchur pwdr
- 3 tbsp Salt
METHOD FOR MAKING THE STUFFING
Heat oil , when hot add ½ tsp asafoetida ,give a nice mix and off the flame. Allow it to cool .
Dry roast fenugreek seeds + fennel seeds + jeera + black pepper + ajwain + mustard seeds till aromatic. Don’t burn it .
Allow to cool and grind into coarse powder . transfer to a plate . Add red chilli powder = ½ tsp asafoetida + turmeric + kalonji + salt + amchur powder .
Add 2 tbsp of the oil and mix well .
METHOD
Wash the fresh chilli and wipe each of them using a kitchen towel. There should be no moisture left in the chilies. Use gloves while handling the chillies.
Cut the top part of the chilies and make long slits in each of them using a sharp paring knife.
Deseed it – optional .
Tightly fill the masalas powder mixture.
Put the stuffed chilies + remaining masala powder in a large sterilized jar preferably made of glass or any other non-reactive material.
Pour the oil all over the chillies .
Shake well making sure the oil is distributed all over .
Cover the mouth with a muslin cloth . Secure it tightly with a string .
Place the pickle jar in the sun. During evening take it in .
Next morning, keep in the sun again.
Shake the jar everyday before keeping in sunlight. Keep in the sun for about 7 to 8 days till the chilies soften .
To check if the pickle is done, taste the red chilies. If there is crunchiness in it, then some more days will be needed for the pickle to mature. The red chilies should soften due to the heat from the sunlight.
Store it in the refrigerator or keep the jar in a cool dry place and use as needed.
