Leek soup is a soup based on potatoes, leeks, stock, and milk . Other ingredients used may be salt, pepper, and various spices.

INGREDIENTS
1 tbsp butter
2 large leeks, white and light green parts only, roughly chopped (about 2 cups)
Coriander leaves with tender stems – ½ cup
Onion thinly sliced – 1 small
6 garlic, peeled and chopped
2 small potato, peeled and chopped into small cubes [ chop small to save cooking time ]
3 cups water / stock
1 bay leaves
1 clove
1 small piece of cinnamon
1 teaspoon salt
1/4 teaspoon ground black pepper
1 cup hot milk
METHOD
Melt the butter over medium heat in a cooker .
Add cinnamon + bayleaf + clove + garlic and stir fry for a min .
Add onion and stir fry for a min .
Add the leeks and mix well .
Stir and cook for 2 mins . Add the potatoes and mix well .
Add coriander leaves and give a mix .
Add water / stock , mix well and bring to a boil.
Cover and pressure cook until the potatoes are very soft.
Once done fish out the cinnamon and bay leaves and discard them .
