Dahi ragda puri

DAHI RAGDA PURI

INGREDIENTS  AS REQUIRED

  • Puffed puris tsore bought or homemade
  • Fresh thick curd [ not sour ]
  • Ragda made from white peas
  • Finely chopped onion
  • Red chutney
  • Sweet chutney
  • Green chutney
  • Chaat masala
  • Fine nylon sev
  • Finely chopped coriander leaves
  • Lemon

PREPARATION

Ragda – soak the white dried peas overnight and pressure cook it .

Ragda

Green chutney1 cup coriander leaves + ½ cup mint leaves + green chilli + tiny piece of ginger + 1 garlic + salt + sugar .

Sweet chutney pressure cook dates with seed  + little tamarind. Grind it by adding little water .Strain it .boil it by add chilli pwdr + roasted jeera pwdr .

Recipe – khajur aur imli ki chutney

Red chutneytake equal quantity red chilli and garlic .Remove the seeds of red chilli and soak it in hot water for 30 mins or more .Grind it with garlic .

Puffed puris

Recipe –Puri for pani puri

Curd beat the curd till smooth .

METHOD

Mix little chaat masala in the ragda

Take 6 puris and gently punch hole on the top with your thumb.

Add a tbsp of hot / warm ragda .

Top it with onions.

Now add all the 3 chutneys one by one .

Pour a tbsp of curd .

Sprinkle chaat masala .

Now generously top it with fine sev .

Sprinkle coriander leaves all over .

NOTES

  1. For ragda puri or dahi ragda puri the ragda has to be hot / warm.
  2. If adding hot ragda ,then be quick .
  3. Adjust all ingredients as per taste .
  4. We can also add mashed potato / finely chopped tomato .
  5. Avoid curd ,for making just ragda puri .
