SIMPLE AND EASY RESTAURANT STYLE GRAVY RECIPE

INGREDIENTS

  • Paneer – 250 or 300 grms / chicken / boiled eggs / boiled and fried potato / mixed fried veges – as needed
  • Tomato – 4 medium [ don’t use sour tomato
  • Onion – 1 small [ optional ]
  • Tomato ketchup – 1 tbsp
  • Sugar – 1 or 1 1/ 2 tsp
  • Oil + butter / ghee – 2 tbsp
  • Ginger garlic paste – 2 tsp
  • Red chilli pwder – 1 ½ tsp or as per taste
  • Turmeric pwdr – ¼ tsp
  • Coriander pwdr –  2 tsp
  • Jeera pwdr – ½ tsp
  • Garam masala pwdr – ½ tsp or kitchen king masala pwdr – 1 tsp
  • Chaat masala pwdr – ½ tsp
  • Tandoori food colour – a pinch [ optional ]
  • Kasoori methi – 1 tbsp
  • Fresh cream – 2 or 3 tbsp
  • Salt to taste
Same gravy added potato – par boil the potato and fry them and add to the gravy

PREPARATION

  1. Chop the tomatoes into small cubes .
  2. Take tomatoes + onion + 1 or 1 1/4 or 11/2 cup water in a cooker and pressure cook upto 2 whistles. [ add water as per the consistency you want – for thick gravy just add 1 cup water ]
  3. Off the flame and let it cool .
  4. Once cooled blend the tomato + ketchup + sugar + salt  into fine puree using mixer or blender .[ DON’T ADD extra water while grinding , just use the water in which the tomatoes were cooked ]
  5. Take chilli pwdr + kitchen king masala + turmeric + coriander pwdr + jeera pwdr + chaat masala  in a bowl . Add ½  cup water and mix well .

METHOD

Heat oil + butter in a pan .

Add ginger garlic paste and stir fry till raw smell leaves .

Add masala paste and stir fry till oil releases. Add kasoori methi and mix well .

Add the puree and mix well .

Let it come to a boil .

[ IMP TIP – taste and chk the gravy and adjust sugar / ketchup / kasoori methi accordingly for the restaurant kind taste ] .

Bring it to a boil on medium flame .

Add Paneer /fried or tandoori chicken / boiled eggs / boiled and fried potato / mixed fried veges – as needed  and give a gentle mix.

Simmer for a min , mix and off the flame .

Finally add the fresh cream and give a nice mix .

Serve with any Indian bread items or rice items .

NOTES-

  1. You can stir fry ½ cup capsicum cubes and also add.
  2. Adjust masalas as per taste .
