Paan balls
PAAN COCONUT BALLS / PAAN BALLS /PAAN TRUFFLE
INGREDIENTS FOR COVERING
- Desiccated coconut – 1 cup
- Condensed milk – 6 or 7 tbsp
- Very finely chopped betel leaves / paan – 3
- Light green colour – few drops
METHOD FOR MAKING OUTER COVERING
Take the condensed + coconut + chopped paan + food colour in a non stick pan and cook on medium low flame for 2 to 3 mins till the mixture thickens .
Transfer this mixture to a bowl, allow it to cool .
Once it cools refrigerate it till chill .
INGREDIENTS FOR STUFFING
- Gulkand – 2 tbsp
- Finely chopped nuts like cashew / badam – 2 tbsp
- Tutti frutti -2 tbsp
- Fennel seeds / saunf coarsely ground – ½ tsp
- Whole fennel seeds- ½ tsp
- Soft betel nuts / supari / katri supari – 1tsp
- Desiccated coconut – 1 or 2 tbsp for garnish
METHOD FOR MAKING THE STUFFING
In the same pan take all the ingredients of stuffing and cook on low flame for 2 mins till it thickens.
Transfer it to another bowl and refrigerate this also till chill.
METHOD FOR MAKING THE BALLS
Divide the mixture of the outer covering mixture into small portions .[ 7 or 8 ] Take one portion and roll it into a smooth ball .
Divide the mixture of stuffing also .portion should be less than the outer covering .Roll each portion into small balls.[ balls have to be smaller than the outer covering balls ]
Now flatten it in your palms , place stuffing ball in the middle .
Gather the edges of the outer covering and roll it into a ball .[ just like we do for parathas]
While stuffing and rolling apply little pressure with your fingers.
Take the desiccated coconut kept for garnishing in a plate ,roll these paan balls over the coconut ,till it is coated all over .
Once all the balls are prepared ,refrigerate these balls .
NOTES
- You can also add pan bahar powder in thestuffing
- You can add chopped cherries and colourful jeera goli .
- Gulkand is easily available in paan shops /ask the paan shop fellow from where he buys in your area /also available in shops where we buy baking items.
WHAT IS GULKAND / ROSE PETAL JAM ?
Gulkand is made of rose petals . Take 1 cup firm red rose petals. Clean , wash , pat dry and keep it open on a towel for sometimes. Now take these petals and crush it with a stone or finely chop it . Mix it with 2 or 3 tbsp of sugar ,transfer to a jar ,close it and keep it under sun for few days till the colour changes and sugar melts completely .Store it in fridge .
