ASH GOURD MOONG DAL CURRY RECIPE

INGREDIENTS

  • Ash gourd peeled and chopped – 3 or 4 cup
  • Moong dal – ½ cup
  • Oil – 1 tbsp
  • Jeera + mustard seeds – 1 tsp
  • Onion – 1 finely chopped
  • Curry leaves – 1 sprig
  • Green chilli – 1
  • Garlic crushed – 1 tbsp
  • Tomato finel chopped – 1
  • Red chilli pwdr – 1 tsp or as per taste
  • Coriander pwdr – 1 tsp
  • Asafoetida – generous pinch
  • Turmeric – ¼ tsp
  • Salt to taste
  • Coriander leaves to garnish

METHOD

Peel and chop the ash gourd into cubes.

Wash and soak the moong dal till use

Heat oil in a cooker , crackle jeera + mustard seeds.

Add onion + green chilli + curry leaves and stir fry till translucent.

Add garlic and stir fry for few seconds.

Add tomato + salt and cook till soft.

Add chilli pwdr + coriander pwdr + turmeric + asafoetida and stir fry for few seconds.

Now add ash gourd + dal and mix well.

Stir and cook for 1 minute .

Add roghly 2 cup water and mix well.

Pressure cook upto 3 to 4 whistles till the gourd is soft .

Once done allow the pressure to release.

Open and give a nice mix.

Garnish with coriander leaves.

Serve it roti or rice .
