BUTTER GARLIC STIR FRIED ZUCCHINI

Zucchini is packed with many important vitamins, minerals, and antioxidants. It has a high fiber content and a low calorie count. Fiber plays an important role in digestion and may limit the likelihood of suffering from a variety of GI issues.

INGREDIENTS

  • 2 medium size zucchini
  • 1 tbsp butter
  • 1 tbsp minced garlic
  • 2 tsp lemon juice
  • ¼ cup grated cheese [ optional ]
  • Salt to taste
  • Pepper pwdr as needed
  • 2 tbsp torn basil leaves

METHOD

Trim off the ends of the zucchini and chop it .

Heat butter in a pan .

Add garlic and saute for a minute.

Add zucchini slices and continue to cook until zucchini is tender but still crunchy for about 3 minutes.

Off the flame  and add lemon juice + cheese + salt + pepper + torn basil leaves  and mix well.

Serve immediately .
