EASY BAIGAN ALOO IN PEANUT MASALA

INGREDIENTS

  • Roasted peanut – ½  cup
  • Grated coconut – ¼ cup
  • Coriander powder – 1 tsp
  • Sambar powder – 1 tbsp
  • Turmeric pwdr – ¼ tsp
  • Red chilli pwdr – 1 tsp or as per taste
  • Onion – 1 small
  • Ginger garlic paste – 2 tsp
  • 1 small tomato
  • Tamarind pulp – 1 tbsp
  • Jaggery – 1 or 2 tsp
  • Small brinjal – 5 or 6 [ Make cross slits ]
  • Potato – 1
  • Oil – 2 tbsp
  • Salt to taste
  • Mustard seeds – ½ tsp
  • Jeera – ½ tsp
  • Methi seeds – a pinch
  • Asafetida – a generous pinch

METHOD

Grind together roasted peanut + onion + tomato + ginger garlic paste + masala pwdrs + tamarind pulp + jaggery + salt .

Grind into a coarse mixture by adding little water. Taste and adjust the ingredients .

Heat oil in a cooker .

Crackle mustard seeds + jeera + methi seeds + asafoetida.

Add the slit brinjal + potato cubes and mix well.

Stir fry for 2 mins.

Add the ground masala and stir fry for 2 mins.

Add 1 cup water and give a nice mix.

Adjust salt .

Presuure cook upto 2 or 3 whistles .

Once done let the pressure release .

Open and give a mix and garnish with coriander leaves .

Serve with hot rice /roti / pulao.

NOTE

  1. Instead of sambar masala you can use garam masala .
  2. You can grind the masala in fine paste and make a gravy .
