FRESH RAJMA BEANS MASALA

Fresh rajma beans masala

INGREDIENTS

  • Fresh rajma / fresh red kidney beans – 2 cup
  • Onion – 1 finely chopped
  • Tomato puree  – 2 big [ not sour]
  • Ginger + garlic paste – 1 tsp
  • Few whole garam masala –  jeera, 1 clove, 1 cardamom, few pepper, small piece cinnamom, bayleaves
  • Turmeric pwdr – ½ tsp
  • Red chilli pwdr – 1 tsp or as per taste
  • Coriander pwdr – 1 tsp
  • Everest chole or rajma masala pwdr – 1 tbsp
  • Tomato ketchup -1 tsp [ optional ]
  • Oil – 2 tbsp
  • Salt as per taste
  • Fresh cream – 2 tbsp [ optional ]
  • Finely chopped coriander leaves for garnish

PREPARATION

Shell the fresh beans. We need 2 cups of beans .

  1. Pressure cook on medium flame upto 1 whistle. After the first whistle lower the flame to lowest and cook for 10 to 12 mins till the rajma becomes soft and tender.
  2. Make puree of tomato  .

METHOD

Heat oil in a pan .

Add the whole garam masala , let it splutter.

Add the onion and fry till translucent .

Add ginger garlic paste and fry till raw smell leaves .

Add  chilli pwdr + turmeric pwdr + chole masala pwdr + coriander pwdr   fry till raw smell leaves .

Add the boiled rajma + 1 cup of water or the stock the beans is cooked  ,mix well.

Adjust water accordingly. As the gravy  thickens on cooling , let it be of medium consistency.

Allow it to boil .

Once it starts boiling , lower the flame and simmer 2 or 3 mins .

Add fresh cream and mix well .

Off the flame and garnish with coriander leaves.

Serve hot with basmati rice, jeera rice ,naan , khulcha etc accompanied by  salad ,papad and onion rings.

Take 2 tbsp of the cooked rajma and grind it into a paste. [optional ]

VARIATION – Take 2 tbsp of the cooked rajma and grind it into a paste to give thick gravy  texture to the gravy. This paste need to be added while adding the rajma .

FOR RAJMA RICE

Heat 1 tbsp ghee in a pan ,add  ½ cup of cooked rice +  1 cup of  rajma gravy ,mix well.

NOTES

  1. Fresh rajma beans come in different colours.
  2. Fresh cream is optional.
  3. Don’t buy green beans pod . Buy  yellow pods .
  4. Don’t use sour tomatoes.
  5. You can also add kasoori methi pwdr in the end.
