Langar wali dal
MAA KI CHOLE DAL / LANGAR WALI DAL / AMRITSARI DAL
INGREDIENTS
- Split black urad dal with skin – ½ cup
- Chana dal – 4 tbsp
- Onion finely chopped – 1
- Tomato – 2 small [ pureed ]
- Oil + ghee – 2 tbsp
- Grated ginger – 2 tsp
- Turmeric pwdr – ¼ + ¼ tsp
- Jeera – 1 tsp
- Bayleaf – 1
- Ginger garlic paste – 2 tsp
- Asafoetida – 1 generous pinch
- Red chilli pwdr – 1 ½ tsp or as per taste
- Coriander pwdr – 2 tsp
- Garam masala pwdr – ¾ tsp
- Sugar – 1/2 or 1 tsp
- Tomato ketchup -1 tbsp
- Kasoori methi pwdr – ¼ tsp
- Fresh cream – 1 or 2 tbsp
- Finely chopped coriander for garnish
PREPARATION
- Clean ,wash ,rinse both the dal .Soak it together for overnight . Pressure cook it with grated ginger + ¼ tsp turmeric pwdr + salt till the dals become soft . Cook on medium flame upto 1 first whistle .After the first whistle lower the flame and cook of 15 minutes .[ ignore the whistles ]
- Grind the tomatoes into fine puree .
METHOD
Heat oil + ghee ,add jeera + bay leaf and let it splutter .
Add onions and fry till light golden .
Add ginger + garlic paste and fry till raw smell leaves .
Add tomato puree + salt and fry till oil separates .
Add chilli pwdr + turmeric pwdr +coriander pwdr + garam masala pwdr + asafoetida + sugar and fry for few seconds .
Pour the cooked dal + required amount of hot water .[ gravy has to be thick ]
Add tomato ketchup + fresh cream and mix well .
Simmer on low flame for 1 or 2 minutes.
Sprinkle the kasoori methi pwdr and mix well .
Off the flame and garnish with coriander leaves + fresh cream .
Transfer to a serving bowl .
Serve hot with basmati rice / Indian breads.
VARIATION [ optional ] – Mix 1 tsp of Kashmiri red chilli pwdr with 2 tbsp water. Heat 2 tbsp of ghee ,add the red chilli pwdr mixture and stir fry for few seconds for raw smell to leave. Pour this over the dal kept in serving bowl .
NOTE
- Tempering with red chilli pwdr is optional ,I just did it to add some colour to the dal ,it is not required .
- I have added ketchup / sugar and kasoori methi to enhance the flavor of the dal .
- If the dal becomes very thick ,add little hot water .
