MASALA MUSHROOM / BEECH MUSHROOM RECIPE

The beech mushroom, is an edible mushroom native to East Asia. These are gilled mushrooms that grow on wood. Most often the mushroom is found on beech trees, hence the common name.They come in 2 colour – brown and white .

INGREDIENTS

  • Mushroom – 1 pkt [ I have used beech mushroom ]
  • Oil – 1 ½ tbsp
  • Onion – finely chopped
  • Tomato  – 1 big
  • Ketchup – 1 tsp
  • Sugar – ¼ tsp
  • Ginger garlic paste – 1 tsp
  • Red chilli pwdr – 1 tsp or as per taste
  • Turmeric – ¼ tsp
  • Coriander pwdr – 1 ½ tsp
  • Garam masala pwdr – ½ tsp or 1 tsp kitchen king masala
  • Salt to taste
  • Fresh cream – 1 tbsp [ optional ]
  • Kasuri methi – 1 tsp [ optional ]
  • Finely chopped coriander leaves to garnish

PREPARATION

  1. Clean , wash and pat dry the mushroom .
  2. Grind the tomato + ketchup + sugar  into a fine puree.

METHOD

Heat 2 tsp oil in a pan .

Add the mushroom and stir fry till the mushroom shrinks and there is no moisture.

Now add the capsicum and stir fry for a min .

Remove and keep aside.

In the same pan heat 1 tbsp oil .

Add the onion and stir fry till golden .

Add ginger garlic paste and stir fry till raw smell leaves .

Add tomato puree + salt and mix well.

Cook till oil separates.

Add the red chilli pwdr + turmeric + coriander pwdr + garam masala pwdr .

Stir and cook for few seconds.

Add ¼ to ½ cup water  and mix well.

Bring to a boil .

Add the fried mushroom + capsicum and mix well.

Add fresh cream + kasoori methi and mix well .

Simmer for a min and off the flame .

Garnish with coriander leaves.

Serve hot with any Indian bread or rice items.
