SRILANKAN JAFFNA STYLE SPINACH CURRY

Sri Lankan Spinach curry / Keerai paal curry / coconut milk Keerai kadayal / keerai masiyal  / Spinach curry with coconut milk /Jaffna style spinach curry 

INGREDIENTS

  • 1 tbsp coconut oil
  • 1tsp mustard seeds + fennel seeds
  • Red chilli
  • 1 tbsp garlic crushed
  • 1 onion
  • 2 or 3 green chilli
  • ¼  tsp turmeric powder
  • 3 cup chopped ceylon spinach
  • Salt
  • ½  cup coconut milk [ medium consistency ]

METHOD
Heat oil and crackle mustard seeds, fennel seeds and red chilli.

Add garlic + green chilli + onions and stir fry till translucent.

Add turmeric powder + spinach + salt and mix well.

Saute till spinach gets wilted.

Add coconut milk and mix well.

Mash and cook till curry comes together .

Once done ,off the flame .Don’t make very dry . Serve hot with rice .
