Cheesy paneer envelopes
CHEESY PANEER ENVELOPES / LIFAFA

INGREDIENTS
- · Maida – 1 cup
- · rava / Fine sooji – 1 tsp
- · Oil – 1 tbsp
- · Baking soda – a pinch [optional ]
- · Salt to taste
METHOD
Mix all ingredients in a big plate .
Cover and keep aside for 30 mins .
Slowly add water and start kneading .
Knead it into a firm and stiff dough .
Divide the dough into big equal portions.
Roll each portion into a smooth ball using your hands .
Now roll each ball into a very thin disc.[ 7 – 8 inches diameter ]
Heat a tava .
Roast the disc on both sides slightly for 20 or 30 seconds .[ Don’t cook fully ]
Cut these discs into 4 parts as shown in pics .[ quarters]
***** Remember we want big triangles ,so for that the disc also has to be big .Only if the triangles are big ,it will be easy for us to make the triangles .
INGREDIENTS FOR STUFFING
- · Paneer scrambled – 200 gms
- · Cheese cubes – 3 grated
- · Very finely chopped onions – 2 or 3 tbsp. [optional ]
- · Very finely chopped coriander leaves – 1/4 cup or more
- · Salt to taste [ add little as we are adding cheese ]
- · Finely chopped green chilli – as required [ avoid if making for kids and add pepper pwdr ]
- · Mixed herbs / oregano – ½ tsp
- · Maida slurry / paste – mix 2 tbsp maida + 2 tbsp water to get a thick paste
METHOD
Make a mixture of scrambled paneer + grated cheese + onions + coriander leaves + salt + chilli /pepper pwdr +oregano .
Take one part of the disc and spoon in a small portion of stuffing as shown in pic – just little above the bottom .
Apply the maida paste on all the edges using finger and start folding to form an envelope .
Slowly fold the bottom part upwards to cover the stuffing .
Now fold the left and right part .
Finally fold the top part .
Wrap it into an envelope shape as shown in pic .
Each time you foldgently press the edges so that it gets sealed.
If you see any small openings ,just cover it with a drop of maida paste.
Repeat this process with all .
Heat oil in a pan for deep frying or shallow frying.
Once the oil becomes hot , lower the flame to medium .
To check if the oil is ready for frying ,add a tiny piece of dough in the oil ,if the dough rises up immediately – it means the oil is ready for frying.
Slide in the envelopes .
Fry on both the sides till golden and crispy .
Remove on an absorbent paper .
Serve hot with any chutney /ketchup /dips .
