MASALA MILK KULFI / DRY FRUITS KULFI

Creamy, soft, delicious… Kulfi is an Indian ice-cream made with milk and lots of dry fruits. The milk is reduced to a very thick consistency and then flavoured with cardamoms, saffron and a whole array or dry-fruits like pistachios, almonds, and cashew.

Masala milk or Masala Doodh is traditional sweetened milk enriched with powdered nuts and flavored with cardamom and saffron. This flavourful drink is made on Kojagiri Purnima in Maharashtra and can be served hot or cold.

Here in this recipe , we are making kulfi using masala milk pwder .

INGREDIENTS

  • 1 litre whole full fat milk
  • 5 tbsp sugar adjust to taste
  • Pinch of saffron strands
  • 1 tbsp almonds
  • 1 tbsp cashews
  • 1 tbsp pistachios
  • 2 OR 3 cardamom

MASALA MILK POWDER

Start by dry roasting the whole nuts – cashew +  pista  + almond + cardamom on medium-low heat .Keep stirring for 2 mins, make sure they don’t turn brown. Alternately for roasting, you can also microwave the nuts for 1 min. Allow to cool completely. They will crisp up as they cool.

Add the roasted nuts +  saffron to a grinder and grind to a coarse powder.

METHOD

In a thick bottom pan, bring milk to boil stirring occasionally to avoid it from sticking to the bottom of the pan.

Add sugar and mix well .

Simmer milk on low flame until the milk reduces to half its original quantity (this takes a lot of time , but you can play with the flame between high and low . Remember to stir the milk in between so that the milk at the bottom doesn’t get burned.)

Cool the mixture and add freshly made dry fruits masala milk powder to this boiled milk and mix well until combined.

Mix well and pour into kulfi moulds

Sprinkle chopped dry fruits from top in each mould.

Set in freezer.

Kulfi will be ready in 5-6 hours

To serve, remove from freezer about few minutes before. Rub the mould between your palms so that the kulfi can easily be removed from the mould. Enjoy.

NOTES

  1. Use full-fat milk for that rich, thick, and creamy consistency.
  2. Roasting the dry fruits, makes them crunchy and grinding easier.
  3. For variation, add rose petals while boiling milk or just a drop of rose essence.
