MICROGREENS HIGH PROTEIN SALAD

Microgreens, while small, are nutritional powerhouses packed with vitamins, minerals, and antioxidants. They offer various health benefits, including supporting immune function, promoting digestive health, and potentially reducing the risk of chronic diseases. Their ease of growth and versatility also make them a sustainable and enjoyable addition to a healthy diet. 

MUSTARD MICROGREENS – To grow mustard microgreens, start by filling a shallow tray with moist potting mix. Sprinkle mustard seeds evenly on top, cover with a thin layer of soil, and mist with water. Keep the seeds moist and in a dark place until they germinate (3-7 days). Once germinated, move them to a sunny spot and continue to mist regularly. Harvest after 3-7 days.

INGREDIENTS

  • Mixed veges chopped – 2 to 3 cups [ cucumber, bell peppers red and yellow/ green capsicum/ deseeded tomato , black olives ,onion ]
  • Microgreens  – 1 cup
  • Boiled chana / rajma – ¼ cup
  • Olive oil – 2 or 3  tbsp
  • Black pepper pwdr / chilli flakes – 1 tsp
  • Finely minced garlic – 1 tsp
  • Oregano pwdr / Italian herbs – 1 tsp
  • Salt to taste
  • Lemon juice – 2 or 3 tsp lemon juice
  • Honey – 1 or 2 tsp [ optional ]
  • Finely chopped coriander leaves or mint leaves or basil leaves torn or dill leaves – 1 or 2 tbsp
  • Feta cheese or  paneer or egg  or boiled chicken – ½ cup

METHOD

Whisk the olive oil, lemon juice, garlic , oregano, salt  and pepper pwdr  together until blended.

Combine the veges and mix well .

Finally add feta cheese/ paneer  / egg /boiled  chicken + coriander leaves / mint / dill leaves .

Refrigerate for sometimes and serve.
