Pui Metuli or the seeds of Malabar Spinach is an unique vegetable that tastes like pui saag 

INGREDIENTS

  • Malabar spinach seeds – chopped – 2 cup
  • Potato sliced – 1
  • Oil – 1 tbsp
  • Paanch phoron masala – 1 tsp
  • Bay leaf – 1
  • Red chilli – 1
  • Ginger garlic crushed – 2 tsp
  • Onion chopped – 1
  • Red chilli pwdr – ¾ tsp or as per taste
  • Turmeric pwdr – ¼ tsp
  • Coriander pwdr  – ½  tsp
  • Salt to taste

METHOD

Heat oil in a pan , crackle the paanch phoron seeds.

Add bay leaf + red chilli and give a stir.

Add ginger garlic and stir fry till raw smell leaves .

Add the potato and stir fry for a min.

Add the seeds and mix well.

Stir and cook for a min.

Sprinkle little water , cover and cook till the potatoes are done.

Add the masala powders and mix well.

Stir fry for a min and off the flame.

Serve hot as a side dish .
