Spaghetti aglio e olio
SPAGHETTI AGLIO E OLIO – is a traditional Italian pasta .
INGREDIENTS
- Cooked spaghetti – 2 cup
- Olive oil – 2 to 3 tbsp
- Red chilli flakes /finely chopped red chilli – 1 or 2 tsp
- Garlic thinly sliced – 8
- Parmesan cheese / any cheese grated – 3 to 4 tbsp
- Very Finely chopped parsley /coriander leaves – 1 tbsp
- Salt to taste
PREPARATION
- Boil the spaghetti with salt till they become soft . [ 10 -12 minutes]. Check after 8 mins , if they are crunchy cook more till it becomes soft. While boiling keep stirring in between so that they don’t stick. Drain and rinse in cold water and again drain using a strainer. Keep aside.
METHOD
Heat oil in a pan .
Add the garlic and fry till light brown .[don’t burn it]
Lower the flame and add chilli flakes + salt ,mix well .
Add the cooked spaghetti and mix well so that it blends with the oil well.
Add parsley and mix well by tossing .
Off the flame .
Transfer to a serving bowl .
Garnish with grated cheese and serve hot .

NOTES
- Olive oil is must.
- This recipe asks for more olive oil,so add generously .
- The pasta gets its taste from the garlic which infuses its flavour in the olive oil .
- Actual recipe asks for parmesan cheese ,but I have used processed cheese asparmesan is bit costly .
- You can add pepper pwdr/oregano /mixed herbs .
- Yes y not add stir fried veges /shrimp /chicken also .
- The spaghetti has to be cooked ,not over cooked .
