SIZZLERS RECIPE

Sizzler is an open-roasted, grilled or shallow fried piece of meat/ chicken/ fish / vegetable patty, served with french fries, shredded cabbage, tomatoes, carrots, french beans etc . It is served on a metal or stone hot plate, kept on a wooden base.
The word “sizzler” comes from the sizzling sound that one hears when, the food is served on a very hot plate and sauce is poured over .Worcestershire Sauce based gravy is poured on, which dribbles on the hot plate and heats up.
Sizzlers can be made with topping of any cuisines whether Indian /continental /Chinese /thai /Lebanese etc
Different sauces are used .Big cabbage leaves are spread on the hot plate before topping .
DIFFERENT SIZZLERS
- LEBANESE SIZZLER – Rice tossed with any veg +hot sauce + falafel .
- THAI SIZZLER – thai red curry + sweet corn cutlets + green rice + veges stir fried with fried onions
- INDIAN SIZZLER – any tikki + stir fried rice + any sauce or Indian gravy like makhana + boiled or stir fried veges
- CHINESE SIZZLER – fried rice + any Manchurian gravy + noodles = stir fried veges
- ITALIAN SIZZLER – any pasta or spaghetti cooked in red or white sauce + veges tossed in butter +mashed or baked potatoes + cutlets
- CONTINENTAL SIZZLER – buttered rice + cheese corn balls +tomato cream sauce + stir fried veges
- VEG SATELLITE SIZZLER – stir fried veges in cream and pepper + pasta in red sauce + bread toast + French fries.
- VEG SHASLIC SIZZLER – fried paneer / grilled pineapple + stir fried veges in butter and herb +rice tossed with corn and herbs + French fries + blanched spinach .
- EXOTIC VEG SIZZLER – stir fried exotic veges in soya sauce + any tikki + rice tossed with capsicum /bell pepper and spring onion + French fries + red sauce .
BASIC INGREDIENTS REQUIRED FOR SIZZLER
- Sizzler plate – if you dont have sizzler plate ,use a iron tava / pan with any wooden base. Don’t use non stick pan ,the sauce will not sizzle .
- Any sauces
- Any variety of cooked rice
- Any pattice /cutlets /tikkis
- Mashed /fried potato
- Few big leaves of cabbage
- Stir fried veges – beans /baby corn/cauliflower/carrot /brocolli/bell pepper /capsicum /mushroom
- Baked beans or small rajma
- Non vegetarians can use steak /chicken meat – fried or steamed.Top with egg etc

SIZZLER WATER [ mix all ]
INGREDIENTS
- Water – 1/4 cup
- Soya sauce – 1 tbsp
- Oil – 1 tbsp
- Butter – 1 tbsp
In the recipe below ,will be sharing few sauce.
1 – BROWN SAUCE
INGREDIENTS
- Garlic – 7
- Carrot – 50 gms
- Onion – 50 gms
- Butter – 2 tbsp
- Maida – 3 tbsp
- Water – 700 ml
- Magic cube – 1
- Bayleaf – 2
- Soya sauce – 1 tsp
- Vinegar – 1 tsp
- Salt and pepper to taste
METHOD
Heat butter and saute the garlic in it.
Add bayleaf + onion + carrot and stir fry till pink .
Add maida and mix well.
Add water + stock cube + salt + pepper pwdr ,mix well.
Boil till sauce reduces to 500 ml.
Filter it and add soya sauce + vinegar + salt + pepper pwdr and again boil for a min .
3 – HOT GARLIC AND GINGER SAUCE
INGREDIENTS
- Tomato blanched and pureed – 1 cup
- Garlic grated – 1 tbsp
- Finely minced ginger – 1 tbsp
- Finely chopped spring onion – 1 tbsp
- Black pepper pwdr – 1/2 tsp
- Salt to taste
- Sugar – 1/2 tsp
- Ajinomotto – a pinch
- Vinegar – 2 tbsp
- Oil – 2 tbsp
- Orange red colour
METHOD
Heat oil ,add ginger + garlic and saute it.
Add all other ingredients one by one and mix well.
Cook for a minute and off the flame .
No need to over cook .
4 – HOT AND SPICY RED SAUCE
INGREDIENTS
- Onion – 1 small finely minced
- Red chilli pwdr – 3 tsp
- Garlic paste – 1 tbsp
- Oil – 4 tbsp
- Water – 1 1/2 cup
- Tandoor food colour
- Soya sauce – 1 tbsp
- Red chilli sauce – 1 tbsp
- Tomato ketchup – 1 tbsp
METHOD
Heat oil ,and saute onion till golden .
Add garlic paste and stir.
Lower the flame .
Add chilli pwdr .
Add soya sauce + red chilli sauce + tomato ketchup + food colour + water and mix well .
Cook for a min and off the flame.
5 – PEPPER SAUCE
INGREDIENTS
- Fresh cream – 200 gm
- Corn flour – 1 tbsp
- Water – 1 1/2 cup
- Pepper pwdr – 1/4 tbsp
- Mustard pwdr – 1/4 tsp
- Finely chopped spring onions white part – 1 cup
- Butter + oil – 1 tbsp
*** make a mixture of corn flour + mustard pwdr = black pepper pwdr + water.
METHOD
Fry onions in butter .
Add the mixture and boil for few minutes .
6 – RED SAUCE
INGREDIENTS
- Tomato puree – 100 gm
- Finely chopped onion – 1 small
- Finely chopped tomato – 1
- Black pepper – 4
- Garlic – 4
- Bay leaf – 3
- Butter + oil – 2 tbsp
- Soya sauce – 1 tsp
- Vinegar – 1 tsp
- Salt to taste
- Sugar – 1/2 tsp
- Red chilli sauce – 1tsp
- Ketchup – 1 tsp
- Black pepper pwdr – 1 tsp
- Mixed herb – 1 tsp
- Corn flour – 1 tbsp
- Water – 1 cup
METHOD
Heat oil + butter .
Add garlic + bayleaf +black pepper.
Add onion and fry till translucent.
Add chopped tomato and mix .
add tomato puree and mix well.
Boil it till raw smell leaves .
Add other ingredients .
Finally add the cornflour mixture and boil till shiny .
7 – WHITE SAUCE
INGREDIENTS
- Butter – 2 tbsp
- Maida – 2 tsbp
- Salt pepper to taste
- Milk – 120 ml
METHOD
Heat butter and add maida.
Fry for few seconds .[ colour should not change]
Add milk and mix well .
Finally add the salt and pepper and mix.
HOW TO ASSEMBLE AND SERVE
Before you start keep all the ingredients ready .
Heat sizzler plate on direct heat till red hot .[ 10 – 15 min ]
Now carefully place it on the wooden base .
Place few cabbage leaves .
Now quickly –
In the middle add a portion of cooked rice .
Next to it pour little gravy or any of the above sauce .
On another side place few stir fried veges .
Next place 2 cutlets or fired potato fingers .
Take it to the dining table .
Now sprinkle the sizzler water all around the edges of sizzler plate .
The water will make sizzling sound .
Serve immediately .
