CRISPY WHEAT FLOUR CHAKLI /WHEAT FLOUR MURUKKU

INGREDIENTS
- Wheat flour – 1 cup
- Rice flour – 1/4 cup
- Jeera – ½ tsp
- Ajwain – ½ tsp [ optional ]
- White sesame seeds – 1 tsp
- Turmeric – a pinch
- Kashmiri red chilli powder – 1 tsp
- Asafoetida – a pinch
- Salt to taste
- Oil for deep frying
NOTE – We can add upto 1/2 cup of rice flour .Also we can make it without rice flour. There will be a difference in texture .
METHOD
Take wheat flour + rice flour in the centre of clean cotton cloth and tie tightly like a potli .
Steam the flours for 18 to 20 mins in a cooker or any steamer .
Because of pressure cooking, wheat flour will become hard. Grate this harden wheat flour, then sieve the grated flour with fine mesh sieve. If you find small crystals, crush with fingers and make fine powder.
Heat oil in a deep kadai for deep frying .
Add all the other ingredients + 1 tsp hot oil and mix well.
Gradually add water and knead into smooth stiff dough .Cover the dough till use.
Grease chakali maker from inside with little oil. Stuff the dough mixture tightly. Press chakali on the back of a hole ladle .
slide it into the hot oil.
Deep fry chakalis over medium high heat
Turn and flip the murukku and fry onother side also .
Fry till they turn crispy from both sides.
Drain and remove and remove over a paper towel .
Once it cools down completely store in an airtight container .
NOTES
You can add readymade chakli masala instead of red chilli powder .
BAKING
Pre heat oven at 190 deg C .
Line a baking tray with parchment paper/ butter paper.
Press the chakli over the baking sheet.
Bake for 8 – 9 mins .
Flip and bake after 8 mins on other side .
Total it takes – 17-20 mins
NOTE – keep checking after 10 mins ,as wheat flour cooks fast and it may burn .
The baking time also varies from oven to oven
Once done, cool down and store in airtight box.
NOTES
- You can add 2 tbsp rice flour to the wheat flour .
- Instead of red chilli pwdr add pepper pwdr .
- Steaming of flour is an important step , Do steam the flour well .
