CHEESY VEG BRUSCHETTA

It is a delicious and mouth watering Italian appetizer.

Bruschetta is classically known as small toasted bread slices that are topped with any veg or non veg toppings .

Bruschetta comes from the Italian word ‘bruscare’ which means “to roast over coals.” In its simplest form, Bruschetta requires that bread be toasted over real coals or grilled, then rubbed down with slices of raw garlic, drizzled with olive oil and finished with a little bit of sea salt and fresh pepper.

Variations may include adding toppings of tomato, olives, vegetables, beans, cured meat, basil, onion, mozzarella or cheese.

INGREDIENTS

  • Finely chopped onion – ½ cup
  • Finely chopped tomato – ½ cup [ remove the pulpy part]
  • Finely chopped capsicum – ½ cup
  • Boiled corn – ½ cup
  • Finely minced garlic – 1 tsp
  • Chilli sauce – 2 tsp
  • Ketchup – 1 tbsp
  • Lemon juice – 1 tsp
  • Olive oil – 1 tbsp
  • Chilli flakes – ½ tsp
  • Pepper pwdr – ¼ tsp
  • Mixed herbs or oregano – 1 tsp
  • Salt to taste
  • Chopped coriander leaves or parsley or basil leaves – 1 tbsp
  • French loaf or garlic bread
  • Olive oil as needed to toast the bread
  • Grated cheese as needed

METHOD

For the topping mix all ingredients one by one as shown in the video and mix well.

Refrigerate and keep aside for an hr.

Cut the bread loaf into ½  inch slices.

Spread  Olive Oil on both sides of the  bread slice and arrange on the baking tray .

Bake it for 5 mins in preheated oven at 200 *C

Now open and remove the tray, flip the bread on other sides and spread a layer of cheese.

Again bake for 5 to 7 mins till the cheese melts.

Now remove and arrange the bread on a serving plate.

Top it with the prepared toppings and serve immediately .

You should serve bruschetta immediately after preparing it, otherwise the bread will become soggy. If preparing for a party or gathering, you can serve the toasted bread and tomato mixture separately and let people top it themselves.

NOTES

  • Instead of toasting in ovem , you can toast it on a tava/ pan .
  • I have used garlic bread, if using plain bread then after toasting you can sprinkle garlic pwdr or rub garlic over.
