MASALA RAVA UPMA / RAVA PULAV

Masala upma

INGREDIENTS

  • Rawa – 1 cup
  • Water – 4 cup
  • Oil + ghee – 2 or 3 tbsp
  • Mustard seeds and urad dal – 1 tsp
  • Curry leaves – few
  • Onion finely chopped – 1 small
  • Green chilli finely chopped – 1
  • Ginger garlic paste – 1 tsp
  • Tomato finely chopped – 1 small
  • Sugar- 1 tsp
  • Garam masala or kitchen king masala – 1/4 tsp
  • Turmeric pwdr – 1/2 tsp
  • Red chilli pwdr – 1/4 tsp [we have already added green chilli ]
  • Mixed veges like beans /cauliflower /peas /carrot finely chopped – 1 cup
  • Finely chopped coriander leaves – 2 tbsp
  • Freshly grated coconut – 2 tbsp for garnish [optional ]

PREPARATION

  1. Very finely chop the veges .
  2. Boil the green peas for 3 or 4 mins .
  3. Dry roast the rava on medium low flame by continuously stiring till aromatic for 3 to 4 mins .[ colour should not change ]

METHOD

Heat oil + ghee and add mustard seeds + urad dal and let them crackle .

Add onion + green chilli + curry leaves and fry till translucent .

Add ginger garlic paste and fry till raw smell leaves .

Add tomato + salt and cook till oil separates .

Add coriander leaves and fry till it reduces .[ I forgot to add ]

Add chilli pwdr + turmeric + garam masala pwdr and stir fry .

Add the mixed veges and stir fry for a minute .

Add sugar and mix well .

Add water and allow it to roll boil .

Check salt ,if required add .

Once its starts boiling ,simmer the flame and add the roasted rava .

With one hand add the rava and with other hand keep mixing to avoid any lump formation .

Mix well  and cover it with a lid .

Cover and cook till the rava becomes soft for 2 to 3 mins – stir in between so that it does not stick to the bottom .

Off the flame and let it sit for few mins .

Garnish with coconut and coriander leaves .

Serve hot . While serving drizzle few drops of lemon juice .

VARIATIONS

SOOJI STICKS OR TIKKIS OR CUTLETS FROM LEFTOVER UPMA

Take the left over upma in mixing bowl and add bread crumbs or fresh bread pieces or corn flour or mashed potato and mix well to make a thick mixture like we make for cutles .

Divide it into small balls and give any shapes you like -ball /cylindrical or square .Dust it with corn flour and deep fry it .

I did not add any masalas as already I have added in the upma .if using plain upma then add .

We can also add grated cheese in the sooji mixture

NOTES

  1. Same recipe can be done in a different way – instead of boiling the water and adding the roasted rava ,you can add the roasted rava first in the masala and add hot water .
  2. You can drizzle few drops of lemon juice towards the ending .
  3. As the veges are finely chopped ,it cooks fast .I have used boiled green peas.
  4. Roasting of rava is compulsory .else the upma will be sticky .
  5. For grainy upma add 2 1/4 cup water and for loose texture add upto 3 cup .
  6. Instead of ginger garlic paste you can just add 1/2 tsp grated ginger .
  7. For plain rava upma avoid veges and masala pwdrs.
  8. Add veges and masala pwdr as per taste .
  9. Don’t reduce the oil and ghee .
  10. Instead of adding garam masala pwdr ,we can add few whole garam masala in the oil.
  11. You can also prepare rava vangi baath by adding vani baath masala.
  12. Y not try with sambar masala pwdr .
