ROASTED CAPSICUM TOMATO CHEESY TOAST

INGREDIENTS

  • Onion sliced – 2
  • Tomato – 2
  • Capsicum / bell peppers – 2
  • Thyme /rosemary/mixed herbs / oregano – 1 tsp
  • Jaggery – 1 tsp
  • Balsamic vinegar / lemon juice  – 1 tsp
  • Bread slices – 4
  • Butter – 2 tbsp

METHOD

Apply little oil all over the tomato and bell peppers / capsicum.

Roast on direct fire .Keep turning while roasting .

Roast till black blisters appear all over.

Remove from flame . Cover and keep aside for 5 to 10 mins to sweat. Once cooled peel or scrape the blackened skin. Chop it .

Heat a pan with butter.

Add onion and saute till pink.

Add chopped capsicum and tomato.

Add the herbs and give a mix.

Cover and cook for 2 to 3 mins.

Add vinegar + jaggery + salt and mix .

Off the flame topping is ready .

ASSEMBLING AND TOASTING

Roast bread for 6 mins at 200*C.

Once done remove .

Rub garlic all over and spread a layer of toppings .

Top it with cheese and bake again for 6 mins .

Once done remove and serve with any dips/sauce etc
