SOUTHINDIA STYLE DUDHI CHANA DAL PORIYAL / BOTTLE GOURD STIR FRIED WITH CHANA DAL / LAUKI /SORRAKAI PORIYAL

INGREDIENTS

  • Dudhi / bottle gourd peeled and chopped in small cubes – 250 gms
  • Chana dal – ¼ cup
  • Onion chopped – 1
  • Green chilli chopped – 3 or as per taste
  • Turmeric pwdr – ¼ tsp
  • Curry leaves – few
  • Mustard seeds – ½  tsp
  • Asafoetida – a pinch
  • Jeera – ½ tsp
  • Oil – 1 tbsp
  • Freshly grated coconut – 2 or 3 tbsp
  • Sugar – ¼ tsp [ optional ]
  • Salt to taste

PREPARATION

  1. Peel the gourd and chop it into small cubes .[ smaller the size ,lesser the cooking time ]
  2. Clean ,wash ,rinse and soak the chana dal for minimum 1 hr or few hrs . [ more the soaking time ,lesser the cooking time ].
  3. Boil and cook the soaked dal till soft . Don’t overcook till mushy , it has to be in shape .

METHOD

Heat oil ,add mustard seeds + jeera + asafoetida  and let it crackle .

Add onion + green chilli + curry leaves .

Fry till translucent .

Add the chopped vege and mix well .

Drizzle little water ,cover and cook .

The gourd will sweat and cook in its own juice  .

Add salt and sugar .

Allow it to cook on medium flame. Stir fry in between .

Once cooked till soft , add the cooked chana dal and mix well .

Finally add grated coconut and mix well .

Off the flame.

Serve as a side dish .
