CHICKEN SANDWICH

 A chicken sandwich is a sandwich that typically consists of boneless, skinless chicken breast or thigh served between slices of bread, on a bun, or on a roll.

A delicious mix of mayonnaise, chicken, pepper and some veggies spread on the bread, all done at home in no time. This quick and easy dish is sure to be on your everyday breakfast menu. Chicken thighs are juicier and more flavorful than breasts. But white breast meat is healthier, cleaner and more acceptable than dark meat .So I have used chicken breast

Open chicken sandwich – serve it open on a toasted bread crispy bread .

INGREDIENTS

  • Boneless chicken – 250 gms
  • Mixed herbs – 1 tsp
  • Salt as per taste
  • Brown or white bread as required
  • Olive oil / oil – 2 tsp
  • Finely chopped garlic – 2 tsp
  • Finely chopped onion – 1 small
  • Finely chopped capsicum / corn / bell peppers – ¼ or 1/2 cup  [ optional ]
  • Plain Mayonnaise – ½ cup
  • Chilli flakes – 1 tsp or as required
  • Finely chopped coriander leaves – 2 tbsp

NOTE- Same recipe You can try with paneer also

PREPARTION

  1. Cook the chicken + salt . Allow it to cool . Finely shred or chop the cooked chicken .

METHOD

Heat oil in  a pan ,add garlic and saute for few seconds . [ Don’t burn it ]

Add chopped onion and stir fry for few seconds .

Add capsicum + boiled and fry for 1 minute.

Add the shredded chicken and mix well.

Add mixed herbs or oregano or pizza herbs + salt + chilli flakes or pepper pwdr and mix well .

Off the flame and allow it to cool.

Take the mayonnaise in abowl and mix well .

Add the chicken mixture + coriander leaves and mix well.

Take one bread slice and top it with the stuffing and cover it with other bread slice.

Serve it or take it in tiffin .

NOTES

  1. You can also grill it .
  2. Why not mix little tomato sauce with the mayonnaise.
  3. Instead of boneless ,you can use with bones ,cook and discard the bones.
  4. You can refrigerate the stuffing ,and serve as cold sandwich .
