HEALTHY BEETROOT CARROT RAITA / CARROT BEETROOT PACHADI

INGREDIENTS

  • Fresh Curd – 1 or 1 1/2 cup cup [ chilled ]
  • Finely grated carrot – ½  cup
  • Grated beetroot – ½ cup
  • Finely chopped green chilli – 1 or as per taste
  • Finely chopped coriander leaves – 1 or 2 tbsp
  • Finely chopped onion – ¼ cup
  • Grated ginger – 1 tsp [ optional ]
  • Chaat masala – ½  tsp
  • Roasted jeera pwdr – ½  tsp
  • Black salt / salt to taste

METHOD

Whisk the curd well , now add all other ingredients one by one and mix well .

Raita is ready to be served with any rice variety or parathas.

NOTES

  1. Instead of green chilli you can add red chilli pwdr or pepper pwdr .
  2. Serve it chilled.
  3. Add 1 tbsp of  coarse peanut pwdr for crunchiness.
  4. You can also temper this raita .
