HEALTHY MILLET PORRIDGE /FOXTIAL MILLET COCONUT MILK PORRIDGE /THINAI KANJI RECIPE /COMFORT FOOD

Foxtail Millet is rich in Vitamin B12 which is essential for maintaining a healthy heart, smooth functioning of the nervous system, and in general good for skin and hair growth. A diet including Foxtail Millet may improve glycemic control and reduce insulin, cholesterol and fasting glucose in Type-2 diabetes patients.

INGREDIENTS

  • Foxtail millet or any millets   – ¼ cup
  • Moong dal – 1 tbsp [ optional ]
  • Garlic – 4 [ optional ]
  • Coconut milk – ½ or ¾  cup or as needed – How to extract Coconut milk at home
  • Water – 1 ½ cup
  • Salt to taste

METHOD

Dry roast the moong dal + millet till aromatic and hot .Colour should not change .

Wash it .

Add  1 ½ cup water + salt + garlic .

Pressure cook upto fist whistle on medium flame.

Now lower the flame to lowest and cook for 10 mins [ ignore the whistles ]

Once the pressure release open and give a nice mix .

Add coconut milk and mix.

Adust salt if needed .Heat for a minute and off the flame.dont overcook after adding coconut milk , else it will curdle .

Serve hot . You can sprnkle pepper pwdr while serving .

NOTE –

  1. You can replace coconut milk with milk.
  2. Coconut milk is good for mouth ulcer .
  3. Millets are advised in moderate amounts because excessive consumption can lead to adverse effects as the cereals contain substances that interfere with the functioning of the thyroid gland. Millets can cause delayed digestion due to their slow digestibility as they are high in fibre.
