Idlis steamed in jackfruit leaves
IDLIS STEAMED IN JACKFRUIT LEAF BASKET / KHOTTO / HITTU / KHOTE KADUBU

INGREDIENTS
- Idli batter [ little thick than regular idli batter ]– refer here for recipe – Batter for soft idli
- Jackfruit leaves as required to make baskets
PREPARATION
The baskets are made with 4 leaves woven together .You can stitch or staple the leaf or use small sticks [ tooth pick ] or broom stick pieces.
Hold ends of 4 leaves one on top of the other .and staple it .
Now fold the adjacent eaves together and stitch it .[see that there are no holes ]
METHOD
Carefully pour the fermented idli batter into the leaf basket .
Place them in the steamer in standing position and steam it for 20 – 25 minutes depending on the size of the basket .
Once done cool it for 3 – 4 minutes .[else they will break ]
After steaming the colour of the leaves changes .
Peel the leaf and serve the idlis with any Southindian accompaniments .[ sambar /chutney ]
NOTES
- V can also use turmeric leaf /banana leaf /tumbler /steel bowls .
- These idlis have unique flavour.
- Do not overcrowd while steaming .
