RED LOBIA BIRYANI / RED COWPEA BIRYANI
INGREDIENTS
- Basmati rice – 1 cup [ aged ]
- Water – 2 ¼ cup
- Red lobia / red cow pea – ½ cup
- Oil + ghee – 2 or 3 tbsp or more
- Few whole garam masala – sai jeera + bay leaves + clove + cardamom + peppercorn + star anise + cinnamom
- Onion – 1 big sliced
- Green chilli – 1 slit
- Tomato – 2 big chopped
- Ginger garlic paste – 2 tsp
- Mint leaves + coriander leaves finely chopped – ½ cup
- Curd – 3 or 4 tbsp
- Lemon juice – 1 tbsp
- Red chilli pwdr – 1 ½ tsp or as per taste
- Coriander pwdr – 3 tsp
- Turmeric pwdr – ½ tsp
- Garam masala – 1 tsp
- Salt to taste
- Fried cashew + finely chopped coriander leaves for garnish
PREPARATION
- Clean ,wash and soak the lobia overnight .
- Clean , wash , rinse and soak the rice for 20 – 30 mins .
METHOD
Heat oil + ghee in a heavy bottom pan , add the whole garam masala and allow it to sputter . [ never allow the garam masala to burn or it will give a bad aroma to the food ]
Add onion and fry till golden brown.
Add ginger garlic paste and fry till raw smell leaves.
Add tomatoes + green chilli and fry till it becomes soft and oil separates.
Add chilli pwdr + coriander pwdr + garam masala pwdr + turmeric , mix well and fry till raw smell leaves.
Add curd and give a nice mix.
Add coriander leaves + mint leaves and fry till it it shrinks.
Add the lemon juice and mix well.
Add the soaked lobia ,mix well .
Cover and cook for 5 mins.
Drain the excess water from the soaked rice and add it .
Mix well and add 2 ¼ cup of water + salt , mix well .
Cover and cook till water evaporates on medium flame .
Once the water evaporates , place a tava below it .
Lower the flame and dum cook for 10 mins .
Off the flame.
After sometime open the lid and fluff it with a fork .
Garnish with fried cashew and coriander leaves .
Serve with salad + pickle + papad + any side dish.
NOTES
- For any rice recipe , soaking the rice for 20 mins is a must .
- Soaking the lobia is must,I soaked it overnight ,results were good – perfectly cooked dal.
- Use a good quality basmati rice .
- Together with the dal we can add veges .
- Use a good quality garam masala or use biriyani masala powder .
- If complete water evaporates and the rice is not cooked ,you can sprinkle little water.
