SOAKING DOUGH IN WATER BEFORE MAKING CHAPATIS , ROTIS , PHULKAS , PARATHAS
We are soaking the dough here to get rid of the phytic acid and enzyme inhibitors and toxins and to increase its nutrient density and for easier digestion.
The process of soaking the dough in water for hours helps in making healthy breads [ chapati / roti /phulkas /parathas ]
Our elders said that “attey ki garmi nikal jati hai, bhigone se”
You can soak it from 1 hr to 8 hrs .
Avoid salt in the dough if soaking .
Soak helps inner texture to become light and it is more easy to digest.
If wheat flour dough is soaked that means you are consuming a good roughage which is actually beneficial for weight loss and energy boost.
No more acidity problem .
Many people who are allergic to grains can tolerate them well if they soak it overnight .
The dough becomes very easy to roll and rotis will be more soft .
You can also soak it for overnight or even 18 hrs.
Soaking does give an elasticity to the dough and makes rolling out very easy.
Soaked dough neutralize phytates and enzyme inhibitors and in effect, predigest grains so that all their nutrients are more available.
Phosphorus in the bran of whole grains is tied up in a substance called phytic acid. Phytic acid combines with iron, calcium, magnesium, copper and zinc in the intestinal tract, blocking their absorption. Whole grains also contain enzyme inhibitors that can interfere with digestion.This method of soaking helps in preventing .
METHOD
Knead a hard/tight dough without adding salt .S oak the dough in lukewarm water for minimum 1 – 4 hours.
Drain the water and knead the dough again .It will be sticky , don’t worry .keep kneading .
Now add 1 or 2 tsp oil / ghee and knead into soft smooth dough .
Now use the dough to make chapati / roti / phulka/ puran poli / paratha.
METHOD 2 OF SOAKING
Add 2 or 3 tsp of curd or lemon juice or raw apple cider vinegar or whey . The acid in these ingredients helps in the neutralization of the phytic acid. Here you just have to make a dough , cover and keep it aside for overnight or 8 hrs .No need to soak in water .Here you can soak for 8 to 18 hrs .
