ALOO METHI PARATHA

Aloo methi paratha recipe is a Punjabi aloo methi paratha, supremely tasty variant to the very popular aloo paratha. Stuffed aloo methi paratha is made from aloo, methi, whole wheat flour and Indian spices which are easily available ingredients. Aloo methi paratha can be relished anytime of the day.

INGREDIENTS FOR DOUGH

  • Wheat flour – 2 cup
  • Oil for kneading dough – 1 tsp
  • Salt for kneading dough
  • Ghee as required

METHOD

Mix wheat flour + salt + oil + water and make a soft dough and keep aside for sometime.

HOW TO ROLL PARATHAS

INGREDIENTS FOR STUFFING

  • 3 cup – fresh methi (fenugreek) leaves (cleaned, washed ,strained and finely chopped)
  • 2 cup mashed aloo
  • 1 tbsp  – crushed ginger garlic green chilli
  • Salt To Taste.
  • ¼ tsp – turmeric powder.
  • 1 tbsp  – vegetable oil.
  • ½ tsp chaat masala

METHOD

Heat oil and add crushed garlic /ginger green chilli and stir fry for few seconds.

Add methi and stir fry , till the leaves shrink completely and there is no moisture.

Add turmeric pwdr + chaat masala and salt , mix well .

Add the mashed potatoes and mix well .

Cook on low flame for a min and off the flame.

Allow the stuffing to cool.

Divide the stuffing into equal balls

NOTE

we can add any spices like amchur pwdr or garam masala pwdr or coriander pwdr or roasted jeera pwdr  etc as per taste.

Add 1 or 2 tbsp kasoori methi to the stuffing for more flavour.

METHOD FOR MAKING PARATHAS

Divide the dough into equal balls.Size little bigger than the stuffing.

Roll the dough into small circle and place  the stuffing in the centre..

Bring the edges of the dough together in the centre and pinch it.

Flatten this ball and roll into thick parathas by dusting dry flour .

*Roll it gently .

Heat the tava or non stick pan.

Place the paratha on it .

Fry on both sides by drizzling little ghee .

While frying press it gently with a spatula.

Once done remove it.

Serve hot with any side accompaniments .It tastes heaven .
