HORSEGRAM DAL RECIPE /HIGH PROTEIN DAL /KULTHI /KULITH
Horsegram contains the highest protein content of any lentil in the world. This grain is fed to horses to keep them energetic and maintain weight, hence the namesake. Horsegram is also rich in iron and calcium among other nutrients. It is a poor man’s food as it provides a lot of energy for a small portion consumed. It is a drought tolerant crop that can be grown in a low rainfall area and even on rainfed dry agricultural lands.

Horse gram soup is known as a good natural remedy for kidney stones. It not only helps in dissolving kidney stones but stops them from developing again.
To treat diarrhea, hemorrhage and hemorrhoids. Horse gram plant treats the patients who are suffering from weak liver, spleen enlargement and colic. And to cure the kidney stones, gall stones and high blood pressure increase the intake of horse grams.
Horse gram also helps in lowering cholesterol levels. The lipid level it contains boosts good cholesterol and reduces the blockage in the heart.
It is better to sprout the horsegram and use.
INGREDIENTS
- 1/2 cup Horse Gram /kulith
- 1 tbsp oil / ghee
- 1 tsp Jeera
- 1 Onion finely chopped
- 1 Tomato finely chopped
- 1 tsp orm as per taste Red Chilli powder
- A generous pinch of asafoetida
- 1 tsp Coriander Powder (Dhania)
- ¼ tsp garam masala pwdr
- ½ tsp jaggery
- ¼ tsp turmeric pwdr
- salt
- Coriander Leaves finely chopped for garnish
PREPARATION
Soak the horse gram overhight . if you want you can keep it to sprout the next day .
Pressure cook the soaked gram for 6 to 7 whistles.It should be soft .
NOTE – Sprouted gram may take less time to cook .
METHOD
Heat ghee in a pan on medium flame.
Add cumin seeds and let it crackle.
Add in the chopped onion, saute until the onions are translucent.
Add tomatoes + salt and cook till oil separates .
A red chilli powder + coriander powder + turmeric + asafoetida+ jaggery and stir fry for a min .
Add the cooked horse gram into the pan with the water in which it was cooked.
Bring it to a boil and simmer for a min.
Adjust water consistency as per requirement,I made it dry .
Turn off the flame and garnish with freshly chopped coriander leaves.
Serve Horsegram Dal along with phulkas/ chapati.
NOTE – Adjust masalas as per taste .
Instead of grama masala and coriander pwdr , use 2 tsp maharashtrian goda masala
