POHA KHEER / CHOORA KHEER

INGREDIENTS

  • Poha – ¾ cup
  • Ghee – 2 tsp
  • Milk – 3 cup
  • Broken cashew – 2 tbsp or as required
  • Sugar – 6 or 7 tbsp or as required
  • Cardamom pwdr – 1/8 tsp

PREPARATION

Heat ghee in a pan ,add the cashew and fry till golden.Remove and keep aside.

Take the poha in a strainer ,wash and rinse it .Drain of the complete water .[ no need to soak ]

In same pan add the rinsed poha and stir fry for 2 or 3 mins .Remove and keep aside. [ NOTE – you can avoid frying and add the soaked poha directly ]

METHOD

Boil milk in another pan .

Reduce it to ¾  .

Add the sugar + cardamom pwdr and mix well.

Add the poha and cook on low flame till the pohas becomes very soft .

Cook till you get a semi thick consistency and off the flame .

Garnish with cashew and serve .

VARIATION

  1. We can reduce sugar and add condensed milk for rich taste.
  2. We can also add 1 or 2 tbsp of cashew and poppy seeds .

NOTES

  1. Adjust sugar according to your taste.
  2. Cook till the poha becomes very very soft else on cooling it hardens.
  3. You can use full cream milk .I used toned milk .
  4. Serve either hot or chilled .
  5. We can also powder the poha and make to get a phirni like texture.
  6. You can add the poha without washing also.
  7. You can also add pista /almonds/ raisins.
  8. It thickens on cooling .
  9. Instead of sugar ,v can use jaggery.
