Maharashtrian traditional ras khaproli recipe
MAHARASHTRIAN TRADITIONAL RAS KHAPROLI RECIPE

Traditionally khaproli is made on khapar – tava made of mud ,thus the name khaproli. Mud tava gives it a distinct flavour and taste.
Khaproli is a thick dosa, like Maharashtrian amboli made from mixture of various dals and rice. These dosas are very spongy and porous in texture .It is soaked in sweet coconut milk, made using jaggery and mildly flavoured with cardamom + nutmeg powder.
INGREDIENTS
FOR RAS
- 2 cups freshly grated Coconut.
- ¾ cup or as per taste grated Jaggery.
- Pinch of salt.
- Pinch of turmeric
- ¼ tsp Cardamom powder .
- Pinch of nutmeg pwdr

In a mixie jar, add grated Coconut and 1 ½ or 2 cup warm water and grind till fine paste consistency .now using seive extract thick milk and grated jagerry and mix till dissolve. Add salt + nutmeg cardamom powder+ turmeric , mix well.Adjsut jaggery as the sweetness you want .
NOTE- The coconut milk should be thick .
FOR KHAPROLI:
- 1 ½ cup Rice
- ¼ cup Chana dal
- 1/4 or 1/2 tsp turmeric
- ½ cup Urad dal
- 1 tsp Methi seeds
- Salt to taste.
- Oil /ghee for smearing.
METHOD
Soak the rice, dals,jeera and the methi seeds overnight.
Grind them in to fine paste .
The batter should be of medium consistency not very thick or thin .
Add salt + turmeric and beat the batter well for 2 mins .
Set aside for 8 to 12 hrs for fermentation .
Heat a iron griddle /non stick pan on medium flame.
Stir and pour the batter spreading on the griddle in a circular motion just like dosa .
Cover and cook on slow flame. Bubbles will be formed all over .
Once done turn and cook on other side just for few seconds.
Don’t press the dosa. whil cooking.
Take a dosa on plate pour some ras over it and let it soak for 5 mins before serving .
