AFGANI PALAK KI SABJI

INGREDIENTS

  • Palak – 1 bunch
  • Spring onion greens  – 1 cup
  • Finely chopped coriander leaves – 1 cup
  • Tomato – 2
  • Olive oil or any oil – 3 tbsp
  • Garlic finely minced – 1tbsp
  • Green chilli – 2 or 3 or as per taste
  • Pepper pwdr – 1/4 tsp
  •  Coriander pwdr – 1 ½ tsp
  • Salt to taste

PREPARATION

  1. Bring water to boil and add the palak and tomato whole and boil on high for 5 mins.
  2. Once done strain and keep aside.
  3. Peel the tomato and chop it finely
  4. Chop the palak also .

METHOD

Heat oil in a pan .

Add garlic + green chilli and stir fry for few seconds .colour should not change .

Add spring onion leaves and stir fry till it shrinks .

Add tomatoes and stir fry for 1 or 2 mins .

Add coriander leaves and stir stir fry till leaves shrink .

Add coriander pwdr + pepper pwdr and mix well .

Add chopped palak and stir fry for 2 mins till oil separates .

Off the flame and serve hot as side dish .

NOTE

You can add the spring onion white part also .
