BARLEY IDLI AND DOSA RECIPE / JAU IDLI RECIPE

Barley is primarily a cereal grain popularly known as jau in India. Barley, a grain like wheat, looks like wheat but a hulled grain with gluten but is not wheat.

Barley is also a rich source of B vitamins, including niacin, thiamin, and pyridoxine (vitamin B-6). It also contains beta-glucans, a type of fiber that scientists have linked to various health benefits.

Barley’s potassium, folate, iron, and vitamin B-6 content, together with its lack of cholesterol, all support cardiovascular functions. Niacin, riboflavin, thiamin, folate, iron, magnesium, and selenium all enhance the processes of cell formation, such as carrying oxygen through the blood, and the functioning of the immune system. Barley is a good source of all these nutrients.

The phosphorus, calcium, copper, magnesium, and zinc in barley all contribute to improved bone structure and strength.

INGREDIENTS

  • Barley – 2  cup
  • Idli Rice – 1 cup
  • Urad dal – 1  cup
  • Fenugreek – 1 tsp
  • Poha / murmura  – ½ cup
  • Salt to taste
  • Water as needed

NOTE –  if grinding in mixie the ratio will be 3 : 1 , for grinder 4 : 1

METHOD

In a bowl take barley + idli rice . Wash 3 to 4 times until you see clear water. Soak it in enough water for  6 hours.Once it is soaked add the poha/ murmura and soak for few mins .

In another bowl take  urad dal + methi seeds. Wash 3 to 4 times until you see clear water. Soak it in enough water for 4  hours.

Transfer the soaked rice to the mixie jar and grind in to a smooth batter by adding enough water.

Transfer the batter to a big bowl.

Now grind the urad dal and transfer to the bowl .

Add salt and beat the batter well for a min .

Cover and keep it to ferment for 10 to 12 hours .

Heat water in idli pot.

Mix the batter.

Grease idli plates with oil.

Pour ladle of batter in each idli mould and place in the idli steamer and steam it for 10 to 12 minutes.

When done remove the idli plate from the steamer and keep it aside for a minute.

After a minute wet a spoon with little water and scoop idli .

Serve it hot with any southindian side accompaniments of your choice.

Same batter can be used for dosa also .
