CHETTINAD STYLE POTATO ROAST

CHETTINAD STYLE POTATO ROAST / CHETTINAD URLAI ROAST RECIPE

INGREDIENTS

  • Potato – 4 big [ roughly 500 grms ]
  • Oil – 2 to 3 tbsp
  • Chilli pwdr –  1 ½ to 2 tsp or as per taste
  • Turmeric pwdr – ¼ tsp
  • Coriander pwdr – 1 tsp
  • Garam masala pwdr- ½ tsp
  • Fennel seeds / saunf pwdr –  1 tsp
  • Jeera pwdr –  ¼ tsp
  • Pepper pwdr – ¼ tsp
  • Asafoetida – a pinch
  • Rice flour – 1  ½  or 2 tsp
  • Besan – 1 tsp
  • Onion – 1 big
  • Ginger garlic paste –  1 ½ tsp  OR crushed garlic – 1 tbsp
  •  Curry leaves – few

METHOD

Make a mixture  of  chilli pwdr + turmeric + jeera pwdr + coriander pwdr +  fennel seeds pwdr + garam masala pwdr + pepper pwdr + asafoetida + rice flour + salt as needed .

Peel the potatoes and chop it in to small or medium size cubes .

Wash it well.

Cook it for 10 mins roughly in boiling water with little salt. Cooking time depends on the quality of potato and the size .

Cook up to soft , don’t overcook .

Once done , drain the complete water.

Spread the boiled potato on a plate and sprinkle all the masala pwdrs well and mix it, till they are well coated from all sides .

Keep aside for marination for 10 mins or more .

Heat oil in a flat pan .

Add onion and curry leaves and stir fry till pink.

Add ginger garlic paste and fry till raw smell leaves .

Add the potatoes and give a nice mix.

Spread it evenly .

Sprinkle 1 tbsp of water all over , close the lid and cook for 5 – 7 minutes.

Turn in between to make sure it gets cooked evenly.

The  potato will get roasted well .

Off the flame .

Serve hot as a side dish .

Sprinkle little chaat masala / lemon juice while serving .[ optional ]

NOTES

  • Adjust masala pwdr as per taste .
  • Instead of rice flour v can use besan .
  • Add a pinch of asafoetida .
  • Instead of frying we can also bake it .
  • Same recipe can be tried with raw banana and raw arbi .
  • Pls don’t over cook the potato  .It should be firm
